Starting? You'll probably like these then:
Vampire Hunter D: Bloodlust D is a bounty hunter, but he also is partially vampire. In this movie he sets out to recover a girl that has been abducted by another vampire. Very stylish movie. The "experts" can bash it all they want, but it's the perfect movie to start exploring anime.
Ghost in the Shell If you watched Akira, then this one is obligatory too. Same futuristic setting. Watch it a couple of times at least, first to catch all of the visual attention to detail, and then to understand this "ghost" theory completely. The sequel has been released recently.
You might want to watch the Rurouni Kenshin (some like to call this series Samurai X) original video animations, especially Trust and Betrayal. Way better than the movie. If you think the story and art of the movie rock, then you're going to be blown away by these ova's.

Jin Roh The Wolf Brigade. Another film by the same director as Akira and Ghost in the Shell. Deals with an alternate government Japan after WWII.

RK is the best series ever but please don't watch Reflection the worst OVA ever!!!!! Spoiler Warning -------------------------------------------------------------------- How stupid that Kenshin and Karou die of a dumb illness. Worst ending ever. I wish I never saw it

It wouldn’t have bothered me if he died in battle or because of old age. The fact that is was leprosy and that Karou had sex with him to share the burden was just ridiculous

I'd recommend Urotsukidoji : Legend Of The Overfiend just for the story line, but it's kinda vulgar. And stay off La Blue Girl, bad bad story!

By the way if you are going to take flans advice and watch Vampire Hunter D:Bloodlust, then please watch the original VHD as well. I really do love both movies equally (adore might be a better word in fact), but the original is definitely worth it. Also watch Ninja Scroll, I'm pretty sure you'd like that, it's another classic imho So many anime titles I would personally recommend to someone starting to watch it, but those are the ones that spring to mind straight away Kaz

The story rocks but i find dubbing sucks coz the dubbers were like talking to the telephone. One bad thing is that i cant change it to its original lang. next to my list Vampire hunter D:bloodlust,Jin Roh The Wolf Brigade ,Ghost in the shell 1 and 2 and then.. hmm any suggestions?

Dead Leaves. I watched it two nights ago and I've already seen it 5 times without getting bored. Watch it ASAFP.
