I can't really pick a particular game because I love many of SNK's OST's/AST's, but ones that spring to mind are KIF '96, KOF '99 and MotW's... which is funny, because if you check my review I didn't like the music in the game at first 
. Noise Factories stuff is awesome too... they havem't done a single bad soundtrack yet, and their music was the highlight of the otherwise average MS4.
As for Robert Miles "Children" being in Rocks stage music, there's a few other SNK games that have bits ripped from well known songs... the most notable I can think of being the start of the KOF '98 intro music, which sounds like Walk This Way by Aerosmith
