Wow, that is a VERY tough one to call, good question... mainly because the training sequence was one of my favourite parts, and I adore Gordon Liu especially as he was in one of my all time favourite 70's martial arts films (Dirty Ho... don't laugh it's not what you think 
). Pai Mei absolutely owned, but the centre of the movie is still what goes on betweem Bill and Uma (I wanna say more but no spoilers ).
I guess I'd have to say Bill is my favourite character overall, but Pai Mei is awesome when when it comes to being downright cool in his own way, and also making me feel all sentimental about 70's martial arts movies and the training scenes in some of those. I suddenly feel the need to watch Snake in the Eagles Shadow again now, as well as Drunken Master 1 ;D
