I migh be remembering it wrong then, but I thought during the episode where you first see Haku, Kikashi said "that's an ANBU member" and the subs flashed up telling you what ANBU stood for. I might be wrong though, will have to check that episode when I get home...
Edit: actually it might be "Assassination Ninja Band Unit"... according to a quick google search anyway
