Well you are gonna need to get your xbox modded first, or at least use the hack that allows you to run unsigned code on there.... although that looks like too much hassle to me, just get it modded 
Once modded all you need to do is use a few utilities that you can get from various places to burn the emu and roms on a disc... you can use DVDR, but it's also possible to put them on a CDRW (*MUST* be CDRW as normal CDR's don't work), although DVDR is better if you have a DVDR burner. You can also use various hacks to install one of the various operating systems on your Xbox and actually upload all of your roms onto the Xbox hard drive and play them off there, but that isn't necessary (it's just cool).
Can't really help with you getting it modded though... you'll need to find out about that yourself
