I know alot about emulating a Neo Geo on a Mac.
Compiling a version of MacMAME or GeoMAME really isn't a good idea. Codewarrior, the program to compile it, costs $300 and as a whole seems more difficult to compile than MAME32.
There's a way to program a MacMAME using Apple's Developer Tools but I found that hard to do to.
Unless you're a computer science major and/or know C language, compiling MacMAME isn't recommended.
Suppose you could try the ROM rename trick to fool MacMAME.
