A lot of Jamma boards will work fine in a MVS cabinet. I have plugged in stuff like double dragon and they worked fine. Only thing you have to look out for is if the Jamma game requires -5V. It is also too much trouble to run a street fighter or mortal kombat board in a MVS cabinet. They have a seperate wire harness from the board usually called a kick harness for the extra buttons.
It is possible to wire it up to accomidate all of those boards. May be easier to start with a street fighter cabinet though.
I say just buy multiple cabinets if you have the room. You will be happier with the end result. They are cheap anyways. I have seen street fighter cabinets sell for as little as $50 at auction. Good luck...
