I'm no expert on cabs as I have always gone the supergun route due to a lack of space, but MVS boards are actually jamma anyway... the only difference if I remember right is that jamma has 3 buttons, whereas Neo Geo has an extra wire for the fourth button. If you want to play a standard jamma game in your cab you'd most likely be able to disconnect the jamma connector from the MVS board and plug it into your other game, I can't see why not. When it comes to the Capcom games though, although they will work you'll need to figure out a way to get the extra buttons working, as they usually use 6 buttons. Again, I have no real personal experience with this, so I can't help too much.
